Hangover Breakfast Burger

Well, the name says it all. It covers all the bases for your hangover cure. We start with our new plant based burger, top it with cheesy vegan scrambled eggs, Tofurky’s Smoky Maple Bacon, and top it all off with hot and crisp tater tots. This will not only cure the morning after blues, but will make you want to do it all over so you can eat this sandwich again.

Makes 2 servings

what you’ll need:

½ package tater tots
1 tablespoon preferred vegetable oil
1 package Tofurky Smoky Maple Tempeh Bacon
4 tablespoons vegan butter, divided
1 cup vegan egg
1 package Tofurky Plant Based Burger
½ cup shredded vegan cheddar cheese
4 slices bread, toasted
Ketchup (optional)

how to make:

1. Bake tater tots according to package directions. While tots are baking, heat oil in a large skillet over medium heat. Fry tempeh until browned and crisp on both sides, about 5-7minutes.

2. Transfer to a plate and wipe out skillet.

3. In same pan, melt 2 tablespoons vegan butter. Add vegan egg to skillet and cook, stirring often until small curds start to form. Add shredded cheese and stir to incorporate. Cover and take off heat.

4. In a separate skillet, cook burgers according to package instructions.

5. To serve, butter each slice of toast. Top with burger, cheesy eggs, tempeh, and tater tots. Serve with ketchup if desired.
