Double Patty Diner Burger

Sometimes we crave kale, sometimes we crave chocolate, and sometimes we crave that classic burger you get at the local greasy spoon divey diner. This burger not only squashes that craving, but smashes it to pieces. We start with the classic burger bun topped with the good ol’ standbys- ketchup and yellow mustard and melted vegan cheddar over two burger patties topped with relish, shredded lettuce and a homemade vegan ranch dressing. We not only suggest serving it with tater tots, but we require it! Makes 2 servings

what you’ll need:

½ cup vegan sour cream
¼ cup vegan mayonnaise
1 tablespoon chopped fresh dill
1 tablespoon chopped chives
1 garlic clove, minced
2 teaspoons lemon juice
¼ teaspoon fine sea salt
¼ teaspoon black pepper
2 packages TofurkyⓇ Plant Based Burgers
4 slices vegan cheddar cheese
2 hamburger buns
3 tablespoons ketchup
2 tablespoons yellow mustard
2 tablespoons sweet relish
1 large tomato, sliced
½ head iceberg lettuce, shredded

how to make:

1. In a medium bowl, whisk together vegan sour cream, vegan mayonnaise, dill, chives, garlic, lemon juice, salt, and pepper. Set aside.

2.In a large skillet, cook burgers according to package instructions flipping burgers once. Place 2 slices of cheese on top of each burger. Cover and let cheese melt.

3. To serve, spread 1 ½ tablespoons ketchup on the bottom of each bun and spread 1 tablespoon of mustard on the other side. Place 2 burgers on ketchup side, top with, 1 tablespoon relish, 2 slices tomato, ½ cup shredded lettuce. Drizzle ranch dressing over and top with bun. Serve with tater tots if desired.
