Skillet Cajun Chick’n And Rice

Craving rice with some spice? Add the optional cayenne pepper if you like to keep your taste buds on their toes.

what you’ll need:

1 tablespoon preferred vegetable oil
1 small onion, chopped
1 celery stalk, chopped
½ green bell pepper, seeded and chopped
½ package (2 links) TofurkyⓇ Andouille Sausage, chopped
1 package TofurkyⓇ Lightly Seasoned Chick’n
2 garlic cloves, minced
1 teaspoon dried thyme
¼ teaspoon cayenne pepper, optional
½ teaspoon fine sea salt
1 cup long-grain white rice
Chopped parsley and green onion

how to make:

  1. In a large skillet over medium heat, heat oil. Sauté onion, celery, and bell pepper until softened, about 5 minutes. Stir in sausage, chick’n, garlic, thyme, pepper, and salt, and cook for 2 minutes more.
  2. Stir in rice and 2 cups water. Bring to a boil, cover, and reduce heat to simmer until rice is tender, about 15 minutes. Remove from heat and let sit, covered, about 5 minutes. Fluff with a fork and serve with parsley and green onion.
