Reuben with Peppered Deli Slices and Russian Dressing

Creamy Russian dressing and tart sauerkraut are the perfect match for our Peppered Deli Slices. Depending on the season, serve this diner favorite alongside a hearty vegetable soup or tossed garden greens for a standout meal.

Makes 4 servings

what you’ll need:

3 tablespoons vegan mayonnaise
2 tablespoons minced dill pickle or capers (or combination)
2 teaspoons ketchup
4 slices rye or marble rye bread
â…” cup sauerkraut, drained
2 slices Swiss style vegan cheese
1 package Peppered Tofurky® Deli Slices

how to make:

1. To make the Russian dressing, thoroughly combine mayonnaise, pickles, capers, and ketchup in a small bowl. Set aside.

2. Assemble sandwiches by evenly spreading dressing on two slices of bread and topping each with half the deli slices, sauerkraut, and cheese. Cover each sandwich with another slice of bread.

3. In a large skillet, warm 1 ½ teaspoons oil over medium-high heat, swirling to coat the bottom of the pan. Add the two sandwiches, and cook until both sides are golden brown and cheese has melted, about 3-4 minutes per side. Transfer to a cutting board, and slice each sandwich in half to be shared.
