Monte Cristo

For the unfamiliar, a Monte Cristo is like the love child of a (vegan!) ham sandwich and French toast. Embrace the savory-sweetness of this recipe with a hefty dusting of powdered sugar, and don’t skimp on the jam.

what you’ll need:

2 tablespoons Follow Your Heart VeganEggTM powder
½ cup ice cold unsweetened soy or almond milk
½ teaspoon black pepper
¼ teaspoon fine sea salt
4 thick slices soft white sandwich bread
2 teaspoons Dijon mustard
1 package Tofurky Smoked Ham or Hickory Smoked Deli Slices
4 slices vegan Swiss cheese
2 tablespoons vegan butter, divided
Powdered sugar and red currant jelly, for serving

how to make:

1. In a medium shallow bowl, whisk together VeganEgg powder, milk, pepper, and salt until completely smooth.

2. Spread 2 slices of bread with mustard and top each with 5 deli slices and 2 cheese slices. Place remaining bread on top.

3. In a skillet over medium heat, melt 1 tablespoon butter. Dip one of the sandwiches into the egg mixture on both sides, and fry, flipping once, until golden brown on both sides. Repeat with remaining sandwich.

4. Serve sprinkled with powdered sugar and serve with red currant jelly on the side.
