Portobello Pizza

We have a soft spot in our hearts for mushrooms (a.k.a. A vegan’s best friend). We normally just put them on top of pizzas but then thought about how awesome it would be to make pizza on top of a mushroom and never looked back. Substitute any of your favorite pizza toppings for the ones in the recipe below.

Makes 4 servings

what you’ll need:

4 portobello mushrooms, stems removed
2 tablespoons olive oil
½ cup prepared marinara sauce
1 teaspoon dried oregano
1 teaspoon red pepper flakes
2 links Tofurky Italian Sausage, crumbled
1 cup shredded vegan mozzarella (4oz)
12 fresh basil leaves, torn or cut into ribbons

how to make:

1. Preheat oven to 375℉. Lightly oil a baking sheet.

2. Place mushrooms on baking sheet. Rub all over with oil and bake until softened, about 20 minutes.

3. With the undersides of the mushrooms facing up, top mushrooms with marinara, oregano, pepper flakes, sausage, and mozzarella. Return to oven and bake until cheese is melted and browned, about 15 minutes.

4. Right before serving, top pizzas with basil.
