Parisian Ham and Butter Baguette

Hopefully your passport is up to date, because we’re headed to Paris! Well, your taste buds are, at least. This sophisticated little sandwich has three basic steps: prepare the spread, spread the spread, and apply the toppings. Start by combining your butter, pickle, mustard and parsley in a small bowl. Next, cut your baguette in half and slice each piece horizontally. Spread your herby butter on each baguette slice (top and bottom), then arrange your cheese, ham slices and roasted red peppers. Beret optional. Bon appetit!

 

Makes 2 servings

what you’ll need:

¼cup vegan butter, room temperature

¼ cup minced pickle or relish

2 tablespoons Dijon mustard

2 tablespoons chopped fresh parsley

1 small baguette

1 package Tofurky Next-Gen Smoked Ham Deli Slices

4 slices jarred, roasted red pepper

4 slices vegan cheese, optional

how to make:

1. In a small bowl, combine butter, pickle, mustard, and parsley until all ingredients are evenly distributed.

2. Cut the baguette into two equal portions then slice each horizontally. Evenly spread the herbed butter across the cut side of all 4 portions of baguette.

3. On the bottom portion of each baguette, layer on cheese (if using) followed by ham slices and roasted red peppers. Cap with the top portions of baguette, and serve.
