Loaded Lunch Wraps

An ode to the Loaded Lunch Wrap. *ahem* Wrapped tightly in the embrace of a spinach tortilla, the layers of our Loaded Lunch Wrap sit proudly. Peppered Deli Slices join familiar friends like vegan cheese slices and savory tempeh strips, while crisp lettuce, red onion, and creamy avo keep things fresh. A drizzle of vegan mayo holds it all together. We serve this Loaded Wrap sliced in half for easier eating, with a side of classic ruffled potato chips for a bit of salty crunch!

Makes 4 servings

what you’ll need:

1 tablespoon olive oil
1 package Tofurky Smoky Maple Bacon Tempeh
4 spinach flavored wraps or vegan tortillas
2 tablespoons vegan mayonnaise
1 package Tofurky Peppered Deli Slices
4 slices vegan cheese
1 avocado, sliced
1 large tomato, sliced
1 cup shredded iceberg lettuce

how to make:

1. In a large skillet over medium heat, warm oil. Once oil is hot, add Smoky Maple Bacon Tempeh strips to pan in a single layer. Cook 4-5 minutes, flipping halfway through, until tempeh is browned and crisp. Remove from heat.

2. Spread mayonnaise down the center of each wrap. Layer Peppered Deli Slices on top followed by cheese, avocado, tomato and lettuce, then top with tempeh.

3. Fold ends of tortilla over the filling then tightly wrap. Cut on a bias prior to serving.
