Cranberry Cider Stuffing Whether you’re looking to compliment our vegan Ham Roast, or scouring the interwebs for delicious cranberry cider stuffing, this recipe will be your new go-to for celebrations. For a fun twist on convention, we’ve added a touch of Hopworks Urban Brewery’s Hard Cider. Better double up on the recipe, 2nd day stuffing is pretty amazing, right? what you’ll need: 1 tablespoon non-GMO canola oil¾ cup finely chopped onion½ cup finely chopped celery (about 1 rib celery)¾ teaspoon sea salt½ teaspoon dried thyme½ teaspoon dried sage½ teaspoon granulated garlic4 cups whole wheat bread (½”) cubes1 ½ cups cooked pearl barley or wheat berries⅓ cup dried cranberries¼ cup finely chopped dried apples½ cup HUB Hard Cider ¼ cup water how to make: Preheat oven to 350˚F. Lightly oil an 8” square baking dish. In a medium skillet, warm oil over medium heat. Add onion and celery and cook, stirring, until softened, about 5 minutes. Remove from the heat and stir in salt, thyme, sage, and garlic. Transfer to a large mixing bowl and combine with bread cubes, cooked barley, cranberries and apples.
