Buffalo Chick’n Salad

We don’t take sides when it comes to condiments. We believe that you can enjoy your buffalo chick’n sandwich with ranch or vegan blue cheese, but for this batch, we went Team Ranch. We cooked up our Lightly Seasoned Chick’n, let it cool a bit, then stirred it together with vegan mayo, celery, red onion, and buffalo hot sauce. We served this tasty concoction on thick slices of white bread with butter lettuce, extra hot sauce, ranch dressing, and a side of seasoned waffle fries.

Makes 4 servings

what you’ll need:

¼ cup vegan mayonnaise
¼ cup vegan buffalo sauce
1 package Tofurky Lightly Seasoned Chick’n
1 celery stalk, diced
½ cup shredded carrot
¼ cup diced red onion
2 tablespoons fresh chopped parsley
Sliced white bread, butter lettuce and vegan ranch dressing for serving

how to make:

1.In a large bowl, whisk to combine mayonnaise and buffalo sauce. Add Lightly Seasoned Chick’n and flake with a fork. Stir in celery, carrot, onion and parsley until thoroughly combined.

2.Spoon buffalo chick’n salad between slices of bread along with butter lettuce and ranch.
