BBQ Chick’n Tacos

We can’t get enough of that hard shell crunch. Barbecue Chick’n is smothered in even more sauce and topped with sauteed peppers and onions and melty cheese, all snuggled together in crispy corn taco shells. It’s crispy, saucy, cheesy, and messy…grab lots of napkins for this one! Makes 4 Servings

what you’ll need:

2 tablespoons preferred vegetable oil
1 medium onion, thinly sliced
1 red bell pepper, seeded and thinly sliced
1 green bell pepper, seeded and thinly sliced
¾ teaspoon fine sea salt
8 hard taco shells
1 package Tofurky Barbecue Chick’n
½ cup preferred barbecue sauce
2 cups shredded vegan Cheddar (8oz)

how to make:

1. Preheat oven to 375℉.

2. In a large skillet heat oil over medium heat. Add onion, peppers, and salt and saute until softened, about 8 minutes.

3. Place taco shells in a baking dish so they stand upright. Fill with sauteed peppers and onions and chick’n and drizzle with barbecue sauce. Top with cheese.

4. Bake until cheese is melted and tacos are slightly browned, about 15 minutes.
