Air Fryer Ham Cordon Bleu

We’ve flipped the typical Cordon Bleu by putting our ham in the starring role, rather than just the supporting sidekick. And we must say, we look pretty good here. A swirl of Tofurky Oven Roasted Deli Slices, white vegan Swiss cheese, and red dried cherries are tucked inside the center of our holiday ham roast. And a seasoned panko crumb mixture topping gives it the perfect golden brown crisp when pulled hot out of the air fryer. Makes 6 servings

what you’ll need:

For the Roast
1 Tofurky Ham Roast
5 slices Tofurky Oven Roasted Deli Slices
3 slices Vegan Swiss or Provolone Cheese Slices
3 tablespoons dried cherries
¼ cup all-purpose flour
¼ teaspoon salt
¼ teaspoon black pepper
¼ cup vegan mayonnaise
1 tablespoon unsweetened, plain non-dairy milk
1 teaspoon Dijon mustard
½ cup panko bread crumbs

For the Dijon Mustard Sauce
2 tablespoons vegan butter
2 tablespoons all-purpose flour
1 cup unsweetened oat or soy milk
1 tablespoons Dijon mustard

how to make:

  1. Preheat air fryer to 300˚F. Line an air fryer baking tray with parchment.
  2. Starting on one end of the roast, create a 1 ½” diameter cylinder cavity using a biscuit cutter as a guide, then carve it out with a knife. Remove ham to create cavity and reserve.
  3. On a clean surface, layer deli slices, overlapping to create a 12” long layer. Layer swiss on top and then place cherries in a single layer on top. Roll from one end to the other, and place in the cavity. Cap ends with a portion of the ham.
  4. In a shallow dish, add flour, salt, and pepper. In a separate shallow dish, combine egg and mustard. In a third shallow dish, add bread crumbs. Coat ham in flour mixture then dip and fully coat in egg mixture. Finally roll in panko and place on prepared baking tray.
  5. Air fry for 40 minutes. Increase heat to 400˚F and cook 2-3 minutes more until golden brown.
  6. For mustard sauce, in a small saucepan over medium heat, melt butter. Add flour and cook for 2 minutes. Whisk in milk, and continue to stir until sauce thickens, about 4-5 minutes. Whisk in mustard and cook for 1 minute. Serve warm with Cordon Bleu Ham.
