Enchilada Pizza with Chorizo

what you’ll need:

1 large vegan flour tortilla
⅓ cup prepared enchilada sauce
⅓ cup canned refried beans
1 bag Moocho Fiesta Shreds
1 Tofurky Chorizo sausage, sliced
Half of a small red onion, thinly sliced
Handful of cilantro, chopped
Lime wedges, for serving

how to make:

  1. Preheat oven to 350˚F. Lightly grease a large baking sheet
  2. On prepared baking sheet, place tortilla and spread enchilada sauce evenly, leaving ½”
    plain around the outer edge.
  3. Add refried beans in medium dollops, smother with shreds, top with sausage, then
    bake until golden and bubbly, about 10-15 minutes.
  4. Cut pizza into six slices, and top with onion, cilantro, and a squeeze of lime juice.
