Thanksgiving Grilled Cheese

After a formal Thanksgiving dinner, nothing tastes quite as right as a messy, gooey grilled vegan cheese Thanksgiving sandwich. The good news is that you already did most of the work the day before.

what you’ll need:

4 slices rye sandwich bread
¼ cup leftover cranberry sauce, plus more for dipping
4 slices leftover TofurkyⓇ Roast or 6 slices TofurkyⓇ Peppered Deli Slices
4 vegan swiss or provolone cheese slices
2 tablespoons vegan butter, divided

how to make:

1. Spread 2 tablespoons cranberry sauce on each of 2 slices of bread, then top with 2 slices each Tofurky roast or 3 deli slices. Divide cheese between sandwiches, then top with remaining bread.

2. In a medium skillet over medium heat, melt 1 tablespoon butter. Place a sandwich in the pan and cook until browned and crisp on the bottom, about 5 minutes, then flip and cook second side. Repeat with remaining butter and second sandwich. Serve with extra cranberry sauce for dipping.
