Roasted Red Pepper Panini with Pesto

If you think sandwiches are boring, this panini is sure to change your mind. Toasty grilled bread, melted vegan provolone, and sweet bell peppers team up with our herbed Italian Deli Slices to bring you a hearty sandwich that’s guest worthy!

Makes 3 servings

what you’ll need:

6 thick slices of ciabatta bread
3 slices vegan provolone deli slices
1 (12 ounce) jar roasted red bell peppers
1 ½ cups arugula or spinach
2 tablespoons prepared vegan pesto or pesto mayo
1 package Tofurky® Italian Deli Slices

how to make:

1. Assemble sandwich by placing a slice of provolone on the bottom slice of ciabatta bread. Top with 4 deli slices, 2 bell peppers slices, and ½ cup arugula. Spread 2 teaspoons of pesto on the top slice of bread and cover the sandwich. Repeat for remaining sandwiches.
2. Warm a lightly oiled grill pan or skillet over medium heat. Grill sandwiches until bread is toasted and cheese has melted, about 2-3 minutes per side.
