Are you available for a last-minute pit stop for ice and cups? You bet. Will you craft *the* dish of the day? OF COURSE. This is it – our Potluck-Perfect Hawaiian Mac Salad. Creamy noodles meet crunchy carrot, tangy pineapple bits, and loads of chopped Tofurky Smoked Ham Deli Slices, all drenched in a bright and peppery dressing that will make tastebuds swoon. Strut your potluck MVP stuff with a tub of this, a couple extra bags of ice, and some folding chairs just in case – this is your time to shine!

 

Makes 4 servings

what you’ll need:

½ pound dry elbow macaroni

1 cup vegan mayo

1 tablespoon rice vinegar

2 teaspoons sugar

¼ teaspoon ground black pepper

1 package Tofurky Smoked Ham Deli Slices, finely chopped

2 medium carrots, shredded

1 (15oz) can pineapple tidbits, drained

how to make:

1. Cook pasta according to package directions, making sure it’s tender before draining. Set

aside.

2. In a large bowl, whisk to combine mayo, vinegar, sugar, and pepper. Add in chopped

ham, carrots, pineapple, green onion, and stir to combine.

3. Add drained pasta and mix together. Refrigerate until ready to serve.
