Tofurky Italian Toasties

When you’re faced with a horde of hungries, look no further than our Tofurky Italian Toasties. This recipe makes a full sheet tray of gooey, toasty sandwiches stacked with our Italian Deli Slices, vegan provolone, mustard and banana peppers, all on buttery garlic toast. They’re quick and easy and will satisfy a mob in the blink of an eye. So keep this recipe at the ready!

Makes 12 servings

what you’ll need:

For the garlic butter

6 tablespoons vegan butter, melted

2 garlic cloves, minced

½ teaspoon sea salt

¼ teaspoon ground black pepper

 

To assemble

24 slices preferred sandwich bread

½ cup yellow mustard

½ cup vegan mayo

2 packages Tofurky Italian Deli Slices

1 ½ cups pickled banana peppers, drained

12 slices vegan provolone cheese

½ cup vegan parmesan

½ cup parsley, chopped

how to make:

1. Preheat oven to 400˚F.

2. In a small bowl, mix to combine butter, garlic, salt and pepper.

3. Lay out bread slices, and brush each slice with garlic butter, using roughly half of it. Lay

slices, buttered side down, onto a sheet pan or cookie sheet, overlapping edges slightly

to fit.

4. In a small bowl, stir to combine mustard and mayo, then spread evenly over bread.

5. Top each slice of bread with 2 deli slices followed by peppers evenly divided. Top each

slice of bread with 1 slice provolone, then another slice of bread.

6. Brush tops of bread with remaining garlic butter. Top with another sheet tray or cookie

sheet of the same size, then weigh down with a heavy skillet or pan.

7. Bake for 10 minutes, then remove skillet and top sheet tray. Sprinkle with vegan parm

and continue baking until golden, about 15-20 minutes.

8. Sprinkle parsley over the tray of sandwiches and serve.
