Jalapeño Popper Ham and Cheese Sandwhiches

Raise your hand if you’ve ever gone to a game day party just for the food. Yeah, us too. And if we’re being honest, we have our eyes fixed and our hearts set specifically on those bite-sized morsels of molten spicy goodness we know as jalapeño poppers. The good news is that you don’t have to pretend to like sports to enjoy this jalapeño popper-inspired sandwich. You just have to enjoy the burn.

Makes 2 Sandwiches

what you’ll need:

4 jalapeños

4 slices vegan sandwich bread

4 tablespoons vegan cream cheese, softened

4oz vegan Cheddar cheese, shredded

8 slices Tofurky Smoked Ham Deli Slices

2 tablespoons vegan mayo

how to make:

1. Heat a large nonstick skillet over medium heat.

2. Cut jalapeños into 4 long pieces each around the core of seeds. Place jalapeño pieces in skillet and allow to soften and brown slightly, about 5 minutes.

3. Lay bread slices on a countertop and spread each with 1 tablespoon cream cheese. Divide jalapeños between 2 of the slices. Top with cheddar, ham, and remaining bread slices, cream cheese side facing in.

4. Spread outside of both sandwiches with mayo.

5. Place skillet back over medium heat. Place sandwiches in skillet and cook, turning once, until golden brown on both sides.

6. Cut each sandwich in half to serve.
