Tatertot Dish

We replaced the standard ground beef and cream of mushroom soup with Tofurky Ground Beef-Style crumbles and a simple homemade sauce. We even added some veggies. You know, so you can tell your mom you ate something green.

Makes 6 servings

what you’ll need:

2 tablespoons preferred vegetable oil
1 small onion, diced
2 packages Tofurky Ground Beef-Style
2 tablespoons all-purpose flour
¾ cup vegetable broth
½ cup frozen corn
½ cup frozen peas
Salt and black pepper
1 package (32 ounces) frozen tater tots
1 cup shredded vegan cheddar

how to make:

1. Preheat oven to 350℉.

2. In a large ovenproof skillet heat oil over medium. Add onion and saute until softened, 6-8
minutes. Stir in ground beef-style and cook, stirring, until browned, about 5 minutes.

3. Stir in flour, then slowly add broth. Bring to a boil, stirring constantly, and cook briefly
until thickened, about 2 minutes. Take off the heat and stir in corn and peas. Add salt
and pepper to taste.

4. Top with tater tots, then sprinkle with cheddar. Cover tightly with foil and bake for 30
minutes. Uncover and bake 10 minutes more or until browned.
