Smoked Ham Tortas
These oversized, overstuffed sandwiches are loaded with all that is good: refried beans, avocado, spicy pickled jalapeños, and enough TofurkyⓇ Smoked Ham help you power through all your adventures. If you’re feeling extra spicy, serve with hot sauce.
what you’ll need:
2 telera or bolillo rolls or any large, crusty roll, split in half horizontally
¼ cup vegan mayonnaise (Such as Follow Your Heart)
½ cup prepared vegan refried beans
1 package TofurkyⓇ Smoked Ham Deli Slices
⅓ cup pickled jalapeño slices
1 small avocado, pitted and sliced
1 small tomato, sliced
⅓ cup diced onion
4 lettuce leaves
2 tablespoons preferred vegetable oil
how to make:
- Lay rolls cut-side up on a countertop. Spread tops and bottoms with mayonnaise and refried beans. Divide deli slices, jalapeños, avocado, tomato, onion, and lettuce between bottom part of rolls. Place top of rolls on top.
- In a heavy (preferably cast iron) skillet over medium, heat oil. Place sandwiches in skillet and weight with a second heavy skillet. Cook until toasted, about 4 minutes. Remove second skillet, flip sandwiches, and place second skillet back on top. Cook 4 minutes more or until toasted. To serve, cut sandwiches in half.
