Mediterranean Scramble

Brighten up your brunch table with our satisfying tofu scramble. Garnish with fresh basil and serve alongside a seasonal bowl of fruit. Feeling fancy? Pair it with a mimosa.

Makes 4 servings

what you’ll need:

1 (14 ounce) package firm tofu, drained
2 tablespoons nutritional yeast
½ teaspoon turmeric
½ teaspoon sea salt
1 tablespoon olive oil
¼ cup chopped sun dried tomatoes
4 ounces baby spinach, roughly chopped
1 package Tofurky® Breakfast Links, cut on a bias into ⅛” slices

how to make:

1. In a large bowl, roughly crumble tofu into medium sized pieces.
2. In a small bowl, combine nutritional yeast, turmeric, and salt. Add to tofu and gently toss until evenly coated.
3. In a large nonstick skillet, warm oil over medium-high heat. Once hot, add tofu and links in a single layer and cook for 3 minutes without stirring. Scramble then add in tomatoes, spinach, and fresh ground black pepper. Cook, stirring occasionally, until spinach has just wilted, about 2-3 minutes.
