Loaded Sloppy Joe Waffle Fries

If you’ve ever mourned the loss of the Sloppy Joe of your youth, take heart! We’ve given them a vegan upgrade, complete with beer and waffle fries. Conveniently, the recipe only uses ½ cup of beer, so you can consider the rest as a treat for the cook.

what you’ll need:

1 pound frozen waffle-cut French fries
2 tablespoons preferred vegetable oil
1 medium onion, diced
1 red bell pepper, seeded and diced
3 garlic cloves, minced
1 tablespoon chili powder
12 ounces Tofurky DIY Burger
½ cup ketchup
½ cup flat beer, preferably a lager or pilsner
1 tablespoon soy sauce
1 cup shredded vegan Cheddar cheese (4 ounces)
3 green onions, finely chopped

how to make:

  1. Bake waffle fries according to package directions.
  2. Meanwhile, in a large skillet heat oil over medium. Saute onion and pepper until softened, 6-8 minutes. Add garlic and chili powder and saute 1 minute more. Stir in DIY Burger and cook, breaking up mixture with a spoon, until browned, about 5 minutes. Add ketchup beer, and soy sauce, bring to a simmer, and cook until thickened, about 5 minutes.
  3. Spoon Sloppy Joe mixture over fries and top with cheese. Return to oven until cheese is melted, about 5 minutes. Top with green onion.
