Holiday Roast with Caramelized Onions and Cherries
Makes 6 servings
what you’ll need:
2 tablespoons oil
1 large onion, halved and thinly sliced
½ teaspoon sea salt
¾ cup dried tart cherries
1 tablespoon finely chopped fresh sage or rosemary
¼ cup balsamic vinegar
1 tablespoon Dijon or stone ground mustard
1 cup vegetarian no-chicken broth or vegetable broth
1 Tofurky® Roast
how to make:
1. Preheat oven to 350˚F.
2. In a large skillet, warm oil over medium-low heat. Cook onions and salt, stirring every 5 minutes, until onions become soft and golden, about 25 minutes.
3. Stir in sage or rosemary and cook for 3 minutes. Stir in balsamic, cherries, and mustard, and cook an additional 3 minutes, scraping any brown bits from the bottom of the pan.
4. Pour broth into a Dutch oven or casserole dish. Place roast in the pan and top with the caramelized onion mixture. Cover tightly with foil and bake for 45 minutes. Uncover and bake an additional 10 minutes.

I wanted to surprise my family. Every year turkey and traditional sides (mac and cheese, mashpotatoes, sweet-corn, bisquets, corn muffins, chicken pot pie, gravy incl mushroom, and etc.) This year I wanted to replace the turkey with tofurkey, and see if anyone even notices. I know it’s a little sneeky, but it’s my scientific experiment with 25 guests. Goal to make the tofurkey, taste, texture, and smell, and looked like slices of turkey with all the toppings and sides. I saw the cherry recipe, that’s a little to much and would give it away. Can you send me a perfect recipe, that literally can match the taste of the real deal turkey with gravy and mashpotatoes. We use the Tofurkey products as a great alternative for my vegetarian son and daughter-in-law and everyone loves it. One Thanksgiving my nephew didn’t know one platter was Tofurkey and said he liked it better than the meat platter he’d tried earlier.
