Classic Chick’n Noodle Soup

Whether you’re feeling under the weather or just crave a big, steaming bowl of cold weather comfort food, this chick’n noodle soup will warm you to your bones. Be generous with the chopped herbs—they add fresh, green flavor and mood-lifting color.

Makes 6 servings

what you’ll need:

1 tablespoon olive oil
1 small onion, diced
1 large carrot, peeled and cut into rounds
1 large celery stalk, diced
1 teaspoon sea salt
4 cups no-chicken broth or vegetable broth
2 ounces pasta such as capellini or spaghetti, broken into small pieces
2 tablespoons fresh chopped parsley or dill
1 package Tofurky® Lightly Seasoned Chick’n, roughly chopped

how to make:

1. In a large pot, warm oil over medium heat. Sauté onion, carrot, celery, and salt until onions begin to soften, about 4-5 minutes.
2. Add broth, 2 cups water, and pasta. Bring to a boil, add chick’n, and reduce heat to low. Simmer until chick’n is heated through, about 5 minutes more, stirring in herbs for the last minute of cooking.
