Waffle Breakfast Sandwich
If breakfast makes you yawn, consider this waffle breakfast sandwich your wake-up call. Savory breakfast sausage patties are topped with a classic tofu scramble and plenty of cheese, all sandwiched between your favorite vegan waffles and drizzled generously with maple syrup. This is a sandwich worth waking up for.
what you’ll need:
8 ounces firm tofu, drained
1 tablespoon nutritional yeast
½ teaspoon turmeric
¼ teaspoon fine sea salt
¼ teaspoon black pepper
2 tablespoons preferred vegetable oil, divided
8 ounces Tofurky DIY Breakfast Sausage, formed into 2 patties
4 green onions, finely chopped
½ red bell pepper, diced
4 prepared vegan waffles
1 cup preferred shredded vegan cheese (4 ounces)
Maple syrup, for serving
how to make:
- Preheat oven to 400℉.
- In a medium bowl, coarsely crumble tofu and toss with nutritional yeast, turmeric, salt and pepper. Set aside.
- In a large skillet, heat 1 tablespoon oil over medium heat. Add sausage and cook, flipping once, until browned on both sides, about 3 minutes per side. Set aside.
- In same skillet, heat remaining 1 tablespoon oil over medium heat. Add green onion and pepper and saute until barely tender, about 4 minutes. Stir in tofu mixture and cook, stirring occasionally, until heated through, about 5 minutes.
- Place 2 waffles on a work surface and sausage, tofu, and cheese between them. Top with remaining waffles. Place on a baking sheet and place in oven until well-toasted, about 10 minutes. Serve with maple syrup.
