Arepas With Chorizo

These arepas are crispy corn cakes made from masa harina (the same magic substance that tortillas are made of) can be filled with a wide variety of tasty things, but we love the spicy bite of chorizo and jalapeño.

what you’ll need:

2 cups masa harina
½ teaspoon fine sea salt
2 tablespoons preferred vegetable oil
1 package Tofurky Chorizo
1 chipotle in adobo sauce, minced
2 green onions, minced
4 ounces vegan cheddar shreds
Thinly sliced jalapeño, chopped cilantro, and lime wedges, for serving

how to make:

  1. In a medium bowl, combine masa, salt, and 1½-2 cups warm water until a smooth but not sticky dough forms. Divide dough into 8 patties. Set aside.
  2. In a large skillet heat oil over medium heat until shimmering. Add arepas and cook, flipping once, until golden brown on both sides, about 5 minutes per side. Cover with foil to keep warm.
  3. To the same skillet, add chorizo, chipotle, and green onion. Cook, stirring, until chorizo is slightly crispy and warmed through, about 5 minutes.
  4. Use a fork to split the arepas in half. Top the bottom half of each corn cake with chorizo mixture, cheddar, jalapeño, and cilantro. Cover with top half of corn cake. Serve warm with lime wedges.
