Apple Cabbage Ham Roast

This holiday main dish has everything you want in a comfort food dish: a beautifully bronzed roast, tender cabbage and tart apples, and a richly flavored, rosemary-scented sauce that is
delicious soaked up by everything from mashed potatoes to dinner rolls.

Makes 6 servings

what you’ll need:

2 tablespoons olive oil
1 medium red cabbage, cored and cut into 8 wedges
1 large yellow onion, cut into wedges
2 tart apples (Granny Smith, McIntosh), peeled, cored and cut into large wedges
4 sprigs fresh rosemary
2 tablespoons fresh chopped sage
1 teaspoon fine sea salt
1 (12-ounce) can or bottle hard cider
2 tablespoons apple cider vinegar
1 Tofurky
Ⓡ Vegetarian Ham Roast, thawed
1 packet Tofurky
Ⓡ Vegetarian Ham Roast Beer Glaze (included in Ham Roast package)

how to make:

1. Preheat oven to 325℉.
2. In a large Dutch oven or heavy ovenproof pot with a lid heat oil over medium. Add
cabbage wedges cut side down and cook, turning once, until browned on both sides, 6-8
minutes. Add onion, apples, rosemary, sage, and salt and cook for 5 minutes more,
stirring occasionally.
3. Stir cider and vinegar into cabbage mixture and place roast on top. Brush ham with half
the beer glaze, cover and bake for 1 hour. Remove cover, brush with remaining glaze, and
bake an additional 15 minutes uncovered.
4. Serve ham sliced with braised cabbage and apples.
