30 Minute Bolognese Sauce

This hearty sauce brings layers of complex flavor from start to finish – simmering our ground “beef” in a full bodied red wine, swirling in rich sour cream for balance, and finishing with hints of warm nutmeg. The best part: With Tofurky style Vegan Bolognese, you get all the robust flavor of the classic but in just a quarter of the time.

Makes 6 servings

what you’ll need:

2 tablespoons extra-virgin olive oil
1 medium yellow onion, diced
1 medium carrot, peeled and diced
½ teaspoon sea salt
¾ cup dry red wine
28 ounces crushed tomatoes
½ cup vegan sour cream
¼ teaspoon fresh ground nutmeg
1 package Tofurky® Ground Beef Style

how to make:

1. In a large pot or dutch oven, warm oil over medium-low heat. Sauté onions, carrots, and salt until onions become soft and translucent, about 8-10 minutes. Stir in Ground Beef Style crumbles.
2. Increase heat to medium and add wine, scraping any bits from bottom of the pan. Once most of the wine has evaporated (about 2-3 minutes), mix in tomatoes. Simmer, stirring occasionally, for 8 minutes. Mix in the sour cream and nutmeg, and continue to simmer, stirring occasionally, for 8 minutes.
3. Serve Bolognese sauce over warm pasta, and top with fresh ground black pepper and chopped fresh parsley if desired.
