TEMPEH
TACOS
Ingredients:
1 small onion minced
2 cloves garlic minced
2 T extra virgin olive oil
8 ounces Turtle Island Tempeh – grated on a cheese grater
½ cup water or vegetable broth
1 teaspoon dried oregano
2 T taco seasoning
½ teaspoon ground red pepper (if desired)
- Heat the oil on medium high and add the onion.
- Cook, stirring often, until the onion starts to soften.
- Add garlic and cook for another minute or two.
- Add the grated tempeh and cook, stirring often, about five minutes. Tempeh should get lightly browned.
- Add the water or vegetable broth and reduce hit to low.
- Add the oregano, taco seasoning and ground red pepper. Stir well.
- Heat until most of the liquid has evaporated. Serve in taco shells or fajitas.
