Sheet Pan Dinner

Keep this sheet pan dinner recipe in your back pocket for those nights when tasty food feels like another hurdle to jump, before you can put your feet up and turn on Netflix. With a little creativity you can swap in different vegetables and seasonings and devise a handful of these dinners — try cauliflower florets, chunks of sweet potato or winter squash, and cherry tomatoes instead of broccoli rabe, potatoes, and onions.

what you’ll need:

1 package Tofurky Italian Sausage
1 bunch broccoli rabe or baby broccoli (about 6 ounces), stems trimmed
12 ounces fingerling potatoes, halved lengthwise
1 cup frozen pearl onions
2 tablespoons preferred vegetable oil
1 teaspoon fine sea salt
½ teaspoon red pepper flakes
½ teaspoon dried oregano

how to make:

  1. Preheat oven to 425℉. On a large baking sheet place sausages, broccoli rabe, potatoes, and onions. Drizzle with oil and sprinkle with salt, pepper flakes, and oregano. Roast until vegetables are browned and tender, about 20 minutes.
