Savory Baked Apples

These baked apples are overflowing with savory sausage goodness, perfect for family dinner when the wind is howling outside. For even more flavor, add a pinch of red pepper flakes and fennel seeds to the filling.

what you’ll need:

6 medium Honeycrisp apples
1 tablespoon preferred vegetable oil
1 onion, chopped
1 tablespoon minced fresh sage
½ teaspoon sea salt
½ teaspoon pepper
½ package Tofurky® Italian Sausage, crumbled or chopped
2 tablespoons maple syrup

how to make:

1. Preheat oven to 375℉. Lightly oil a 9×13” baking dish.

2. Use a paring knife to core the apples, leaving the bottom intact. Use a spoon to scoop out a 1” hole in the apples. Place in baking dish.

3. In a medium skillet over medium heat, heat oil. Add onion and cook, stirring, until softened, about 5 minutes. Add sage, salt, and pepper and cook 1 minute more. Add crumbled sausage to pan and stir to combine.

4. Spoon sausage mixture into apples, and drizzle with maple syrup. Cover loosely with foil. Bake until apples are tender but not mushy, 30 to 40 minutes, removing foil for the last 10 minutes of cooking.
