Stuffed Peppers w/ Tofurky Ground Beef
Savory stuffed peppers.
2 T. Canola Oil
1 Med Onion, diced
2 T. Garlic fresh, minced
1 Pkg Tofurky Ground Beef Style
2 C. Brown Rice, cooked
1-1/2 C Tomato Sauce (We use Newman's Own Marinara)
4 ea Peppers, cut in half lengthwise. (Remove seeds and ribs)
Pre-heat oven to 350F.
Heat a large skillet over medium heat. Place oil in pan. Add onions and cook for 4 to 5 minutes until they become translucent. Stir in garlic and cook for 1 minute. Be careful to not let garlic brown. Stir in Tofurky Ground Beef. Cook for 3 to 4 minutes, allowing the Tofurky beef mixture to begin to brown. Remove from heat. Add tomato sauce and 2 cups of cooked rice and stir to mix well. Place cut peppers in a pyrex style baking dish. Spoon the mixture into each pepper half. Pour about 1/2 inch of water into baking dish. Put into 350F oven and cook for 30 minutes.
