Maple Bacon Tempeh Brussels Sprouts

Fill your kitchen with the warm, comforting smell of the holidays in this hearty dish that pairs our Smoky Maple Bacon Tempeh with sweet, oven-roasted Brussels sprouts. Vegan or not, this vibrant side is sure to steal the spotlight at your table.

Makes 6 servings

what you’ll need:

2 pounds fresh Brussels sprouts, trimmed and halved
5 tablespoons high-heat oil, divided
1 teaspoon sea salt
2 tablespoons pure maple syrup
2 tablespoons balsamic vinegar
½ cup dried cranberries
1 (7-ounce) package of Tofurky® Smoky Maple Bacon Tempeh, cut into ½” pieces

how to make:

1.Preheat oven to 400°F.
2. Place Brussels sprouts on a large rimmed baking sheet, and toss with 2 tablespoons of the oil and salt. Evenly spread in a single layer, and bake until tender and caramelized, about 25-30 minutes.
3.In a large skillet, warm remaining 3 tablespoons oil over high heat. Arrange tempeh in a single layer, and cook, stirring occasionally, until browned and crisp, about 5-6 minutes.
4.Add roasted Brussels sprouts to the skillet, and pour in the maple syrup and vinegar. Stir to evenly coat the Brussels sprouts, and cook an additional 3 minutes. Stir in cranberries, transfer to a serving dish, and top with fresh ground black pepper to taste.

For a hearty holiday meal, these Brussels Sprouts would be delicious with Tofurky Roast and Gravy, roasted acorn squash halves stuffed with a mixture of cooked millet and fresh herbs, a savory Leek and Mushroom Tart, or mashed sweet potatoes.

What was your inspiration for the recipe?

Brussels Sprouts and pancetta are a classic combination and cranberries are an all-American holiday favorite.  The savory Smoky Maple Bacon Tempeh was a great vegan option to replace the pancetta and acts as the savory balance to the sweet cranberries.

How might others customize it to make it a bit more unique?

You can make these Brussels Sprouts extra special by topping with caramelized onions or toasted pine nuts, or even stirring in some steamed or roasted chestnuts into the final dish.
